    Abstract: 新型冠狀病毒肺炎(COVID-19,俗稱武漢肺炎)疫情持續在全球延燒,世界各國餐旅業因此受到了重創。聯合國世界旅遊組織(UNWTO) 的報告指出,疫情對遊客數和國際旅遊營收造成了巨大的損害,在各國紛紛祭出邊境管制禁令下,商務及旅遊急凍,重挫全球觀光旅遊市場,更嚴重衝擊餐旅經營,原本的餐飲市場結構正式遭遇破壞,線上服務較以往更重要,競爭也更激烈,主打實體服務的店家也開始思考如何運用餐飲科技留住客人,這都凸顯餐飲業與科技結合的重要性。因此本研究以愛羅吧機器人麵食館業者與2D食物列印業者吉祥驛站為主要研究對象,藉由文獻蒐集法與深度訪談法收集相關資料,針對餐旅業目前所運用餐飲科技之數位預防措施、替代方案、創新產品等做資料蒐集和訪談分析,探討防疫及應變之措施下,各餐旅相關行業防止肺炎疫情所帶來衝擊之數位轉型因應機制與策略,其成果或可提供相關產業推動防疫相關因應措施時,在餐飲創新與決策上重要的參考依據。
