    Abstract: 本研究利用蝶豆花(學名Clitoria ternatea,英文名Butterfly Pea),是一種高品質,富含蛋白質的豆科植物,蝶豆花源自於赤道一帶東南亞國家,花青素是一種酚類化合物,為類黃酮的衍生物。蝶豆花花青素在醫學上的重要性,可以保護雙眼、控制血糖、幫助清除自由基、抗氧化、增加免疫系統、抗癌、預防高血壓,目前也廣泛的使用在食品、醫療、化妝品等。因此本研究利用反應曲面法求得最適化蝶豆花花青素萃取條件,並分析其抗氧化活性,並作為保健食品及化妝品業之參考。
